Last night I grilled some boneless/skinless Kirkland chicken breast from Costco. These were the biggest chicken breasts I have ever seen. I season them with a dry southwest rub and right before I pull them off of the griddle I put some pepper jack cheese on them Serve with salsa, shredded lettuce, spanish rice and beans. I replaced half of my Weber grill with a coated cast iron griddle. I heat it to 500ยฐ then spray the surface with Weber grill spray just before putting meat on. To clean it up after turning off the grill I pour a bug mug of water on the surface and it sizzles and steams and I push what is left off the griddle with a nylon brush into the drip trough. The griddle is clean and ready for next time. I use this more the the grill half now. Great for beef, fish, chicken and pork. Everything comes off golden brown. ๐
