A flatter lie in a fairway wood does seem to help to reduce the lefts (for a right-handed golfer). In my experience, Callaway fairway woods tend to have pretty flat standard lie angles (in the 'players' models, anyway), and Ping's adjustable fairway woods have a flat setting that worked pretty well for me in the G410 that I used a couple of years back.
For what it's worth, I'm currently using a Srixon Z-F85 3-wood - generally hit it pretty well with the right flight, and it doesn't have any significant tendencies towards left or right. It did take me a little while to get it set up correctly - ended up adding quite a bit of weight to the head to get the feel of the club where I wanted it. (If a fairway wood has a tendency to go left, and you're having problems in hitting it consistently, it's worth adding a bit of lead tape on the toe end of the club to see if that makes any difference - should help to stop the club closing down quite as much, and it's a cheap experiment to try...)
