I think that this format Is simple and will work fine. just get the scorecard and index in a few days ahead for you.
of course with people here there and everywhere we are all reliant on people being honest , i suppose having the card validated by an attest would help if you want to introduce that. I am trusting of our fellow brethren.
One thing to consider are the different time zones, although you will be out west so most of us should have our scores into you ahead of your finish ( depending on the time of day you guys play)
i have a Callaway scoring spreadsheet I use to score league which would allow those without a handicap to participate, however as you say....easy to establish a handicap with some scores.
question: are you thinking two man best ball or just 2 man combined low net ?
a blind draw for teams post all event entries would make it the most fair i guess
