in general lean and medium beef, chicken, pork , fish don't have much in the way of flavour on its own. Almost every meat, poultry and fish recipe no matter the cooking methodology requires or asks for flavours to be added be that by the prep method, herbs , spices, sauces etc
yes a nice, marbleized rib eye steak doesn't need much....all that melted and caramelized fat and meat enzymes Works with. S&P maybe a brush or garlic and rosemary.
people don't typically use the nice cuts of meat to smoke ....smoking adds a unique flavour and its not for all and I certainly dont want it all the time....nor do I want a spicy Indian chicken dish....but I did a wonderful Chicken Tika Masala last night and it was sooo tasty.
some people dont like spice, my father in law was salt and pepper only and meat had to be very well done...no exceptions
as for texture, that is personal preference as well, I can take a soft pulled pork or a firm beef strip loin....
