fatshot Good question.
1) Fuel is easier to get and store..even walmart sells cheap BBQ pellets. The pellets are flavored.
2) Nearly impossible to overcook. Put the grille/smoker on higher heat on each side for awhile (250 or 275), then put it on smoke for a couple of hours. It's nearly effortless to get tender nicely flavored meats.
I have a pit boss and it will heat from a low smoke to over 300 degrees. It takes longer typically to cook, but it's a easier way to get it done.
