It is not sexist to say 'he or she.' It would be sexist for him to assume your gender. Steve gets grief for trying to not be offensive? I have been trying to be nice and to give you the benefit of the doubt, but this is trolling, pure and simple.

Also, if he was being inclusive and politically correct, he wouldn't have limited it to S/He. As you point out, there are more possibilities than simply those two. Finally, his comments in the Tiger/Tampon discussion kind of belie any TRUE concern over gender rights/etc.
