I love walleye, but the best eating walleye are between 1.5 - 3 pounds. Anything over 6 lbs I release. A walleye over 6-7 lbs is almost always a female in their prime production years. Most of my walleye fishing was on trips to Canada. Some Kentucky lakes have walleye, but you need to be dedicated to catch them with regularity. Now I tend to stay more local and generally fish for pan fish, crappie, bluegill, etc., for the table. There is some good sauger fishing in Kentucky, but it is usually in the winter months and at my age I fish for recreation in good weather 🙂 I have a bass pro sweet 16 which I have not gotten out too much in recent years. Golf gets in the way🙂
I can appreciate why you may keep and record a state record fish. A fish this size is nearing the end of life. Walleye, sauger, and yellow perch are all in the same family and all are great eating.
