My wife and son (true southerners I guess) like pimento cheese sandwiches and so my wife often buys a commercial version of it. The last two times we bought groceries there was none and she was missing it, so I looked up and tweaked a recipe for her.
8 oz. sharp cheddar cheese grated
3/4 cup mayonnaise
1 4 oz. jar of diced pimentos (drained and diced finer)
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. salt
1/4 tsp. black pepper (I didn't measure, just ground up a bunch into it)
1/8 tsp. cayenne pepper
The wife and son ate it up and said it was really good. There were some really good looking recipes with cream cheese replacing some of the mayo including the one from Augusta National, but my wife didn't like the idea of cream cheese in it for some reason.
