Did my first cook with this thing yesterday and am impressed. The insulation allows it to maintain temperatures rock solid. I cooked some chicken thighs at 350 degrees for an hour last night after spending about 20 minutes gradually opening the vents until the temp. was reached (I'm just learning with this grill) and they were perfect. Once done with them, I opened the vents up another notch and the temp increased to 450 and stabilized in a couple of minutes and then I grilled some fresh pineapple. Like cooking with an oven, but with smoke. Looking forward to smoking some baby back ribs now. Now I can finally see what all of the hubbub is about with the ceramic egg grills.
