Re: bounce - depends on the typical turf conditions you might experience where you play the most. The firmer the conditions - the less bounce typically needed by most players. I would think 8-10º would be fine, unless you happen to live in an area where there's a lot of wet weather.
I have a 54º Titleist Vokey with 12º of bounce, than also have a 58º degree Vokey with 8º of bounce. If you have a shallower angle of attack into the ball and tend to pick your shots more so than take a divot - the bounce really doesn't factor in so much. I'm generally steep into the ball with my irons, so I have to factor the bounce of the club into the equation.
I will say, however, that a lot of this likewise factors in regarding the green-side bunker conditions. If the sand is loose and fluffy - less bounce generally doesn't work well. But if you're playing from more of a packed sand-bunker that isn't well maintained, or a bunker with a very small base layer of sand with hardpan underneath - you'll probably fair better with the lower bounce option.
A new Titleist Vokey wedge generally runs around $125.... or used to anyway. I haven't bought new wedges in 3-4 years now, but I figure you can find closeout deals on new OEM models for roughly what you're willing to pay.
I really don't think there's a huge difference between OEM or component.... it's just more about the loft/bounce and the overall weight of the wedge (to me). They all tend to look very similar these days and likewise perform very similarly.
