If you adjust to add loft, it closes the clubface. So if you don't want a closed clubface, you position the club square in your hands, which involves rolling it back to square, and you have a higher loft with a square face. Same concepts for open face/ lower loft.
That's it in a nutshell. If you set it down and grip it where it rests, then you will instead have the closed or open face. Some companies try to make their sole designs to overcome this.
