I have 4 sets of irons in rotation. Which set I play that day is totally dependent on the course and conditions.
In the early spring when conditions are brutally muddy and wet up here I use my wide soled Acer XS Pro Irons shafted with heavy 125g FST stepped shafts. The wide sole doesn't sink in the mud and heavy shafts help me groove my rusty swing. I could care less about scores this time of year.
As conditions improve I break out my old SMT 303MBs. Thinner soles with old SK Fiber 95's. More control and swinging a bit harder. Leagues begin and scoring starts to matter.
Peak season I pull out the Wishon 555 MBs. 5-PW shafted with Nippon 950's. Control, great feel and confidence. Also will start playing splits sets for early morning practice rounds (6-8 clubs in a pencil bag strolling)
Travel clubs when I don't know the course I usually bring my old Adams A7's. Shafted with UST graphite probably the most versatile set but distance control is tough for me with them.
