Depends if you're installing them over old tape or a bare shaft. Most people who are doing regripping are going to cut off the old grip, and as long as the old tape doesn't get ripped up during the removal process then the new grip will go right on over the old tape and there will be no difference in size.
If the tape gets ripped up during removal and you need to scrap it off, or if you're doing a new build and installing on a bare shaft, then it will make the grips ever so slightly thinner compared to being installed over tape. But exactly how much thinner depends on the tape. Many OEM's use super thin tape which is just 2-3 mils thick, while some of the higher quality double sided tapes out there are more like 5 mils. And a wrap of tape adds double the thickness of the tape since it wraps all the way around, so we're talking anywhere from 4 to 10 mils difference - which is 1/100 to 1/200 of an inch.
A simple solution to this, if you don't want even that slight reduction in size, is to put a single layer of masking tape or painters tape (which are usually around 5 mils thick) over the end of the shaft and install the grip with air over that. Sure it's a little more work, but it still saves the mess of using solvent and the cost of double-sided tape, and it also makes them super easy to regrip in the future since you can just blow off the old grip and install the new one in under 10 seconds start to finish!
