Made something easy, cheap and tasty 2 days ago.
Chicken leg quarters were on sale so bought a few packs
Put 1 cup of OJ in bottom of slow cooker
Layed out the chicken quarters , they were huge so overlapped
Sliced up one large yellow onion and spread out on top
Sprinkled with 2 tsp of Smoked paprika
Poured on top in 1 cup of Korean BBQ Sauce and One cup of Smokey BBQ sauce
Cooked on high for 4.5 hrs
Removed chicken to baking sheet lined with parchment and put under the broiler for a minute or two to brown and crisp up the skin
Meanwhile added 2 tablespoons of a cornstarch slurry to thicken the crockpot sauce
Served the chicken with home made garlic mashed taters and Poured the sauce over both accompanied by some steamed Broccoli florets with Dano's spice
My son and I got 2 large and tasty dinners out of this for about $10
